Here is a recipe for Sponge Cake:

Ingredients:
- 125g/4oz butter or margarine,softened
- 125g/4oz caster sugar
- 2 medium eggs
- 125g/4oz self raising flour
- coco powder (if want chocolate cake)
- Whipped Cream or Lemon Curd (for putting cakes together)
- Berries
Method:
- Heat the oven to 180c/350f/gas 4
- Line two cake tins with baking paper
- Cream the butter and the sugar together until pale
- Beat in the eggs
- Then sift over the flour and fold in using a large spoonn
- The mixture should have a smooth consistency, if it doesn’t add 1tbsp of milk
- Divide the mixture between the cake tins and spread around the tin
- Carefully place the tins in the oven and bake for 20-25 minutes
- Take out of the oven and leave to cool for 5 minutes
- Once cooled sandwich them together with whipped cream, lemon curd and berrries
