Sponge Cake

Here is a recipe for Sponge Cake:

Ingredients:

  • 125g/4oz butter or margarine,softened
  • 125g/4oz caster sugar
  • 2 medium eggs
  • 125g/4oz self raising flour
  • coco powder (if want chocolate cake)
  • Whipped Cream or Lemon Curd (for putting cakes together)
  • Berries

Method:

  1. Heat the oven to 180c/350f/gas 4
  2. Line two cake tins with baking paper
  3. Cream the butter and the sugar together until pale
  4. Beat in the eggs
  5. Then sift over the flour and fold in using a large spoonn
  6. The mixture should have a smooth consistency, if it doesn’t add 1tbsp of milk
  7. Divide the mixture between the cake tins and spread around the tin
  8. Carefully place the tins in the oven and bake for 20-25 minutes
  9. Take out of the oven and leave to cool for 5 minutes
  10. Once cooled sandwich them together with whipped cream, lemon curd and berrries
  11. ENJOY!!!
